This evening we are attempting a new creation. 'Chocolate Chili Cupcakes'. Pictures and preview recipe coming this week....
The egg baskets are very quick and simple.  Lightly cook bacon so it is still limp but cooked through and line silicone muffin molds on the bottom and the sides with 1-2 slices of bacon so it makes a basket. Gently place a raw egg into nest and make sure the egg white does not cross over the 'bacon boundary' :) (It is best to use a spoon to transfer the yolk first and fill up the nest with the white). Place into pre-heated 400 degree oven and bake for 5-7 minutes or until egg consistency resembles a poach. Gently lift out your 'nests' and plate. Garnish with chopped herbs, salt and pepper, paprika or chili flake for a pop of colour. Another way to vary the dish, add different types of cheese that you fancy to the top for a delicious crust on your egg. Enjoy!

                  Bacon and egg baskets with grilled asparagus and roasted baby yukon golds!

Sunday brunch is a perfect time to dress up an ordinary meal and make it a little more interesting. With a few simple steps one can create a restaurant-worthy plate! Serve with blood-orange mimosas and invite friends ;)

Butter poached lobster tail over a roasted lentil, artichoke and seafood ragout, served with champagne! Girls night done right!
